Berry Coffee Cake

Mixed Berry Coffee Cake
Prep Time: 20 minutes 

Cooking Time: 45 minutes

Makes: 8 servings

Topping:
1/4 cup butter
1/2 cup sugar
1/3 cup flour
1/2 tsp ground cinnamon

Batter:
1/4 cup olive oil
3/4 cup sugar
1 large egg
3/4 cup buttermilk
2 cups flour
1 tbsp baking powder
3/4 tsp salt
2/3 cup strawberries
2/3 cup raspberries
2/3 cup blueberries


Preheat oven to 375 ̊F. Place the butter, sugar, flour, and cinnamon in
a bowl. With a pastry cutter, your fingers or two forks, work until well
blended, then set aside. Make the batter by beating the oil, sugar, and egg
until well-combined. Beat in buttermilk. Add the flour, baking powder,
and salt and mix until just combined. Gently fold in the berries. Spoon the
batter into a lightly, greased 8-inch baking dish. Sprinkle on the topping.
Bake 45 minutes, or until a toothpick inserted in centre comes out clean.

Apple Pie Filling


5 Tart Peeled Apples
1 Cup Sugar
2 Tablespoons Flour
1/2 Teaspoon Cinnamon
1/4 Teaspoon Salt
1 Tablespoon Cider Vinegar
1 Tablespoon Lemon Juice

peel and chop apple, put in water with lemon juice to prevent browning.
mix other ingredients together, add apples.

put ~4 chunks butter on top of mixture before putting on crust.

Apple Cinnamon Muffins


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/3 cup olive oil
  • 1 egg
  • 1/3 cup milk
  • 2 apples - peeled, cored and chopped
  •  
  • Topping:
  • 1/4 cup white sugar
  • 1/6 cup all-purpose flour
  • 1/4 cup butter, cubed
  • 1  teaspoon ground cinnamon

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups or line with paper muffin liners.
  2. Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.
  3. In a small bowl, stir together topping ingedients. Mix together with fork and sprinkle over unbaked muffins.
  4. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.

Chocolate Chip Cookies


Ingredients

  • 1 cup butter, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons hot water
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 1 cup chopped walnuts (optional)

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.
  3. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

Pastry

5 cups of flour
1/2 tsp. of baking powder
1 1/2 tsps.salt
3 tsp. brown sugar
mix all gently

1 box of Crisco into the mix, put a hole in the centre, in a one cup
measure put in one egg, one Tbsp. white vinegar, fill cup with cold
water, pour in and knead all together. 



divide into five portions, wrap in foil and freeze.

Pumpkin muffins


1 c. flour
3/4 c. sugar
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground cinnamon
2 eggs, beaten
1 c. ground pumpkin (canned)
1/2 c. olive oil
1/3 c. apple sauce
optional: cranberries, chocolate chips.
Mix together. Fill muffin cups and bake at 350 for 20-25 minutes.
